Happy Saturday!
It was in the 40s in Columbus last night, which I THINK means that fall is finally upon us 🙂 I’ve been dying to go apple picking, whip out my boots and scarves, light fall scented candles, drink pumpkin beer, and just be cozy.
I have to share a great pumpkin smoothie recipe that my good friend Jacqueline told me about the other day. I don’t know about you, but I usually associate smoothies with spring and summer; however, this one is perfect for fall.
Here’s what you need:
1 frozen banana (peel before putting in the freezer)
1 cup almond milk
2 tbsp pumpkin puree
Cinnamon & nutmeg to taste
2-3 ice cubes (optional)
A blender
In the blender, add the banana (and ice, if you want it) first. Then add the almond milk and pumpkin. Blend together until smooth. Then add cinnamon and nutmeg, mix again, and enjoy!
If you’re watching calories, you’re in luck:
7″ banana – 105
1 cup almond milk (unsweetened) – 40 Cals (this can vary slightly depending on what brand you buy)
2 tbsp pumpkin puree – 7 calories
Cinnamon & nutmeg – 0
Total calories = 152
I’ve tried adding some local honey and Greek yogurt, extra pumpkin (my fave), and different sized bananas. Jacqueline said she usually puts peaches in there too, which I haven’t tried yet but I’m sure it’s delicious.
